KUSA — The FDA is warning people not to eat food with liquid nitrogen added just before consumption, due to risk of serious injury.
Liquid nitrogen is commonly used in a medical setting and as an ingredient to prepare some foods, and the FDA says it’s not all dangerous.
As long as the liquid nitrogen is completely evaporated and no longer an extremely cold temperature when consumed, the FDA said it does not pose a significant risk of injury.
Chuck James is a long-time chef in the Denver area. He has been using liquid nitrogen in food preparation for many years, and recently opened a new business, Eskimo Bros Nitro Ice Cream.
In his commissary kitchen at Jack Rabbit Slims, James demonstrates for 9NEWS how he handles liquid nitrogen safely, and when it’s safe to eat. Watch the full demonstration above.
